When you want to go for the brake overhaul you'd need several kinds of C5 Corvette parts. These could be the Corvette brake pads in which you could buy the Hawk HPS (Street) for the rear and the GM-OEM for the front. It's always advisable to go for the ceramic pads because of the reduced black dust on your wheels. These pads also have great life. They are quiet and you get a better feel from them while racing. An important purchase is the High Performance Brake Package of which there are various types. You could opt for one of the choices that not only give you the 13" cross-drilled and slotted rotors for the front and similar rotors in 12" for the rear but also the high temperature brake fluid and the DOT approved stainless steel brake lines.

C6 Corvette parts for the brakes have similar options. You could go for the brake bleeder tool DIY or MaxPro and the bottle adaptor and tube. The Corvette brake caliper cover set of 4 could be ordered in normal or body color matched varieties. Order some brake fluid test strips too. Then you have the brake pad cover set in highly polished stainless steel and the brake rotor hub covers that are available in black, red and chrome.

Which brake rotors or adaptors do I need to go with my new shimano XTR M975 disc callipers?

I have just bought some Mavic wheels (deemax) with 6 bolt IS. However I also have the Shimano XTR M975 levers and brake calipers. They came with rotors, but they are central lock system. Which rotors can I buy that will fit, or is there an adapter to make my rotors fit (6 bolt IS to center lock adapter)?

You can buy any rotor (make sure its the right size for your caliper placement, or just adjust the caliper) and it will work fine with your brakes. Just buy a decent one, not a cheap one which will likely cause problems, including poor heat reduction.

I'm sure there will be an adapter (but I can't find one with a quick search), but it would be better to get either new hubs, or new rotors (which is cheaper!)

EDIT: For a bigger rotor, you need the caliper to be further from the hub to accomodate the larger diameter. Basically if you were happy with the braking power of your brakes on your old wheelset, just buy the same size rotors, and they'll fit and work just fine with no adjustment to the calipers.
